Soft Cheeses
Soft cheeses like Gorgonzola and Stracchino, are characterised by a high humidity of dough, 45% to 70%. Cheeses like Taleggio can also be seasoned for a short time too.

Fresh Cheeses
Fresh cheeses like Mascarpone, Mozzarella and Primo Sale are white, soft in consistency with a mild taste.

Semi & Hard Cheeses
Semi-hard cheeses like Provolone and Pecorino are created with a dough humidity of 35% to 45%. They gain their consistency and heightened taste from the seasoning process.
Hard-cheeses like Grana Padano and Parmigiano Reggiano develop their strong flavours as a result of a lengthy seasoning process.

Ingredient Cheeses
We supply ingredient cheese which is used in dishes/snacks in the home, food service, and prepared consumer foods.
Natural cheeses used as an ingredient cheese include Mozzarella, Feta and Parmesan. These are used in salads, quiche, omelettes and lasagne. They are functional and used because of their crumbliness, sliceability, spreadability, shreddability or grateability. Flavour and appearance also play a part.

IMPORTED ITALIAN CHEESE
TALEGGIO
Aged in natural caves, Taleggio is an old cheese which has existed since Roman times. A DOP cheese which is produced in the area surrounding Milan.
MOZZARELLA
Atlante's award-winning Mozzarella is produced in Southern Italy, north of Napoli using milk from a water buffalo.
GORGONZOLA
The village where Gorgonzola was produced for the first time has the same name, it is the most famous Italian blue cheese.
GRANA PADANO
A PDO cheese which is produced from raw milk, reserve version produced for 24 hrs.
